Silken Soy Dressing

- 1/3 cup plain silken tofu
- 1/3 cup plain soy milk
- 1 tbsp minced fresh ginger
- 1 1/2 tsp tamari or coconut aminos
- 1 tsp light miso
- 1 tsp Dijon mustard
- 1 tbsp chopped fresh cilantro or parsley
- 1 tbsp chopped green onion, including top
Combine tofu, soy milk, ginger, tamari, miso and mustard in a blender.
Process just until smooth and creamy.
Transfer to a bowl and stir in the herbs and green onion.
Cover and refrigerate.
