Ingredients
1cupEVOO
1cupsun-dried tomatoes
1cupwalnuts
¾cuphemp hearts
2cupsarugula
4-6clovesgarlic
4TBbalsamic vinegar
Instructions
Before preparing the pesto, pour EVOO over sun-dried tomatoes and let sit for 2 hours.
Place all the ingredients in a food processor.
Blend for a few minutes; until fully incorporated.
Put pesto in a glass dish to store in the fridge.

The best thing about homemade pesto is that you can substitute many of the ingredients. Try spinach or kale instead of arugula and use any nuts or seeds in place of hemp seeds.
