Arugula Hemp Pesto

A rich, thick and herby pesto that you'll enjoy with many different meals!

  • Food Processor


  • 1 cup EVOO
  • 1 cup sun-dried tomatoes
  • 1 cup walnuts
  • ¾ cup hemp hearts
  • 2 cups arugula
  • 4-6 cloves garlic
  • 4 TB balsamic vinegar


  • Before preparing the pesto, pour EVOO over sun-dried tomatoes and let sit for 2 hours.
  • Place all the ingredients in a food processor.
  • Blend for a few minutes; until fully incorporated.
  • Put pesto in a glass dish to store in the fridge.
  • Enjoy this delicious, thick, rich and herby pesto!


The best thing about homemade pesto is that you can substitute many of the ingredients. Try spinach or kale instead of arugula and use any nuts or seeds in place of hemp seeds.
