Arugula Hemp Pesto

Ingredients
- 1 cup EVOO
- 1 cup sun-dried tomatoes
- 1 cup walnuts
- ¾ cup hemp hearts
- 2 cups arugula
- 4-6 cloves garlic
- 4 TB balsamic vinegar
Instructions
- Before preparing the pesto, pour EVOO over sun-dried tomatoes and let sit for 2 hours.
- Place all the ingredients in a food processor.
- Blend for a few minutes; until fully incorporated.
- Put pesto in a glass dish to store in the fridge.
- Enjoy this delicious, thick, rich and herby pesto!
