Preheat oven to 325°F.
In a medium bowl, mix together oats, amaranth, flax meal, nuts, seeds, cinnamon, sea salt and coconut.
Add coconut oil, maple syrup and mix to incorporate.
Spread onto a baking sheet and bake for 20-30 minutes, tossing at 15 minutes, until golden brown.
Remove from oven when done and let cool.
Assemble bowls with granola, dried fruit, coconut flakes or cacao chips.
Store granola in an airtight container.
