Pecan Pie Crust Balls
- 1 cup pitted dates
- 1-1/2 cups pecans
- 1 tsp pure vanilla
- 1/2 cup unsweetened coconut flakes
- 1/2 tsp cinnamon
- *coconut flakes for rolling balls
Blend all ingredients in a food processor at high speed until a paste forms.
Press into a glass dish or roll into balls.
Optional: Roll balls in a bowl of coconut flakes.
Chill until ready to eat.
